Bread Upma (vegan)

This is one of those quick snacks that is filling and sort of nutritional 🙂 Good to have with tea or coffee.

  • half an onion
  • 1 green pepper
  • 2 ripe small tomatoes
  • 1-2 handfuls of kale/spinach
  • green chilli
  • Bread (I used sour dough rye bread 4-5 medium slices)
  • jeera/cumin seeds, salt, Bombay sandwich masala, black pepper, turmeric powder (1/4-1/2 teaspoon)
  • lemon juice
  • canola/vegetable oil

Chop onion, green pepper, tomatoes. Heat 1-2 tablespoons of vegetable oil. Add the cumin seeds and fry until fragrant. Next, add the Bombay sandwich masala and onions – sautee. Next, add the chopped green pepper and green chilli – saute. Add tomatoes and kale/spinach – stir until it wilts. Add salt to taste and turmeric powder.

While the tomatoes and kale/spinach are wilting cut up the bread into small pieces. Next add the bread and stir with the vegetable mix that you just made. Add a little bit more oil so that the bread is more crispy than soggy.

Finish up with more salt if needed, black pepper and lemon juice. Enjoy!! 🙂
